    BAROLO “Araldica Flori”

    ,
    Made from Nebbiolo grapes cultivated around the town of Barolo in southern Piemonte. These are trained on a low Guyot trellis at a density 4-5,000 vines/ha. The grapes were hand-harvested, de-stemmed and then crushed to small fermenters, for around 12 days, with daily pumping-over. This ensures good colour and flavour extraction, but avoids over extraction of the abundant Nebbiolo tannins. The wine was drained off at dryness, and the skins transferred to a small press. After pressing the wine was settled for two days, and then racked to stainless steel tanks for malolactic fermentation. After three years maturation in 50hl Slavonian oak casks it was racked and bottled. TASTING NOTE A complex nose combining plum, mulberry, ripe strawberry and brown spice with delicate floral and violet notes. Tannins are firm and pleasingly supported with plump fruit and a rounded texture, giving a good lengthy finish. FOOD MATCH Perfect with wild boar sausages, venison, roast lamb or gamey stews.     The word Bulari is derived from the Latin word Bullarum, meaning bubbles. The Cotswolds, in which the Poulton Hill Estate is located, is steeped in Roman history, with the Roman town of Cirencester close by. TASTING NOTE A beautiful pale gold in appearance, this Bulari has a vibrant nose of freshly cut green apple and pear with citrusy notes of orange peel, lemon and hints of lime zest. The palate is filled with mouth-watering fruits of juicy apple at the forefront, hints of grapefruit and lemon (sherbet) together with a fine mousse creates a wonderfully well rounded mouthfeel with a crisp, clean finish.

    CHAMPAGNE – Champagne Charles Chevalier Brut d’Honneur

    PRODUCTION The vines are mainly planted in shallow soil which encourages the roots to grow deeply into the underlying chalk, providing them with water and warmth. The Pinot Noir vineyard in Aÿ has a sunny, south-facing slope, which allows the grapes to reach excellent maturity. Sustainable and environmentally friendly agriculture is practiced wherever possible. The harvest is always done by hand. Grapes are whole bunch pressed and the juice is racked to a tank where it is allowed to settle for at least 12 hours. The clear juice is racked and yeast added to encourage a thorough fermentation at a cool temperature, approximatly 15-17°C. After a short period of post ferment maturation, the wine is bottled with a yeast addition to allow for secondary, in bottle, fermentation. The dosage is 9 g/l. TASTING NOTE A fine Champagne, made in the classic tradition of the houses of Aÿ. Principally Pinot Noir and Chardonnay with a little Pinot Meunier, matured in cool chalk cellars before release.     After crushing, the must undergoes temperature-controlled fermentation in stainless steel (28-30°C), with pumping over twice a day to extract colour and tannin. After 10-15 days the wine is racked to large 30-60 hl oak casks for 6 months, with further refinement for at least 3 months in bottle. Aromas of black cherry, bramble fruit and hints of violet. The palate has dark, ripe plum and berry fruit with supple tannins and a long, rounded finish.

    FLEURIE (Gamay) “La Reine de l’Arenite” (France)

    Arenite' is the terroir of pinky, crumbly sandstone of the La Madone vineyards, rated as one of the best vineyards in Fleurie. At up to 450m altitude and with soils still untouched by phylloxera, goblet trained vines on the east and south east facing vineyards lie below the Chapel of the Madonna at the top of the hill. Gamay Noir vines range from 40 to 90 years of age. Grapes are hand-picked and wholeberry fermented for 8-10 days (traditional maceration carbonique) followed by a further 2 or 3 days on the skins to assist with aromas. No use of cultured yeasts. Pressed after an 8-10 day cuvaison. First press wine was returned to vat and left for 8 months before bottling. TASTING NOTE Very pretty indeed, a heady perfume of freshly picked irises and peonies drifts above the crushed berry fruit nose. Ripe tannins and fresh acidity support a palate of Morello cherries, strawberries with wonderful savoury finish. VEGAN WINE**

    GARNACHA “Borsao”

    PRODUCTION Selected Garnacha grapes from 15-30 year old bush vines grown on stony, sandy soils, around 450 metres above sea level. 6-8 hours cold maceration on skins followed by gentle pressing. The free run juice undergoes long, cool fermentation of between 14º-18º C in stainless steel tanks at a controlled temperature. TASTING NOTE A delightfully pale Garnacha rosé with intense aromas of bright red fruits, raspberries and strawberries. The palate has ripe red berry and cherry fruit characters, balancing acidity, and an appealing red fruit finish.

    Tasting Note: Flowers and citrus blossom on the nose, racy grapefruit and refreshing minerality in the mouth. Food Matching: This dry Rosé is one of those rare wines that work well with vegetable dishes and spicy ethnic foods. Enjoy it with roast chicken, salmon, seared tuna, summer salads and any sushi from vegetables to strong fish, crab cakes, shrimp cocktails and ceviche. Vinification: Angels & Cowboys Rosé was made using the traditional Provençal method. To preserve nature’s generosity along with old-world tradition, the grapes were harvested at 21° brix. This retained the youthfulness of the fruit, creating a wine style both vibrant and complex. The grapes were lightly crushed and left to macerate on their skin. Once the juice achieved its perfect pale pink hue and began to show fragrant phenols from the skin-contact, the juice was pressed off the must then closely monitored while it underwent a long cool fermentation. Upon completion of fermentation, the Rosé aged on its yeast lees for a little over 2 months, creating great depth and mouthfeel.

    MALBEC “La Mascota”

    Intense and rich Argentinian Malbec, packed with black fruits, both fresh and baked and freshened with a waft of liquorice and vanilla. Winemaking: The harvest is carried out by hand using bunch selection before destemming and crushing at the winery. Fermentation and maceration occurs in stainless steel tanks for a minimum of 25 days at 23-25ºC. Natural malolactic fermentation also takes place followed by ageing in new French and American oak barrels for 15 months. The wine is then filtered & bottled. Vineyard : The vines for these grapes are planted on deep and stony soils in the vineyards of Finca La Mascota in Cruz de Pietra, Maipu, Mendoza.     The Phoenix is hybrid grape bred in Germany and is known for producing excellent quality fruit. The grapes were harvested by hand in 2015, the juice was fermented in stainless steel vats and the wine was released in 2017. Tasting Note Poulton Hill Estate Phoenix is deceptively light in colour. The nose has fabulous elderberry and herbaceous hints reminiscent of a traditional French Sauvignon.     PINOT NOIR “Sierra Grande” (Chile)

    Our Pinot Noir comes from a small Hacienda in Maule. Traditionally fruit farmers, the Moreno Family diversified into wine. The story goes that after a Sauvignon Blanc and Merlot tasting, our winemaker Eric Monnin was served strawberries from the estate. He commented how delicious they were and if they could grow strawberries of this quality, then they must be able to grow Pinot Noir. Low and behold they had already begun working with the varietal and Eric tasted their beautiful Pinot Noir for the first time. The vineyards sit in the shadow of the El Dezcabazado volcano and the resulting soils are both rocky and fertile. Maule s in the southern part of the Central Valley and temperatures here are much cooler than further north. Pinot flourishes in this environment and enjoys the healthy conditions where it can usually ripen without damp. The cooler temperatures allow it to retain crucial acidity which helps provide balance to the ripe fruit. No oak is used. TASTING NOTE A delicate and elegant Pinot Noir showing ripe fruit flavours of plums and wild strawberries, balanced with subtle smoky notes and a deliciously lingering finish. VEGAN WINE **

    PINOTAGE “False Bay”

    The grapes for False Bay Bush Vine Pinotage stem from a single vineyard of unirrigated bush vines in Stellenbosch. The attraction to this mature (planted in 1996), coastal, bush vine vineyard were the cooler temperatures and small, naturally balanced and concentrated berries. Made by Waterkloof's talented young Cellarmaster Nadia Barnard. Balanced grapes are hand harvested, fermented spontaneously with wild yeast and then raised in large wooden casks (or 'foudre' en Francais). The resulting wine therefore, is perhaps more 'Pino' than 'Tage'. No additions other than sulphur as a preservative. Grown, made and bottled in South Africa. Vegan friendly wine. False Bay - Real Wine, Coastal Vineyards, Sustainably Farmed, Hand Picked, Naturally Crafted, Wild Ferment, Cask Aged. TASTING NOTE Wild yeast fermentation, low yielding bush vines and ageing in large French oak foudre inform this richly-fruited, yet savoury and satisfying Pinotage.     In 2006, Charles Smith started his eponymous range of wines, with the aim to create high quality, varietal specific wines true to the place of origin, at a price point everyone can enjoy. These Washington State wines are full of flavour, balanced and approachable, and have consistently garnered 90+ scores by leading industry critics. Growing up just outside of Sacramento, California, in the foothills of the Sierra Nevada Mountains, Charles began craving worldly travel at a young age, thanks to his Welsh mother and French father. Charles later moved to Denmark and while in Scandinavia, he spent the next nine years managing rock bands and concert tours throughout Europe, including the famed Danish duo, The Ravonettes. Wining and dining while on the road became a catalyst for his passion of wine, which ultimately triggered the career he has today. A self-taught winemaker, Charles is a true artisan and pioneer in the wine world. In 2009 Food & Wine magazine awarded Charles Winemaker of the Year, and in 2010 Seattle Magazine recognised him as their Winemaker of the Year. “Some people don’t think that food and wine pairing is that important, but they couldn’t be more wrong.     SAUVIGNON BLANC “Cloud Factory”

    PRODUCTION Judiciously sourced from 3 vineyard sites between the Waihopai, Wairau and Awatere Valleys. Fruit for this wine comes from vineyards throughout Marlborough’s Wairau Valley. From the coastal vineyard of Rarangi (coastal pea gravels, sand and silts, cooler coastal site) up through the central (old river bed gravels with think fertile top soil) and southern valley vineyards (clay loams over silts and gravels, warm sheltered site ) to the Rapaura area vineyards (stoney river bed soils). The vines are grown on the VSP trellis system to give optimal cropping to gain maximum flavour during the growing season. Grapes are picked and immediately pressed to tanks for clarification. The fruit was gently pressed, cold settled, racked and cool fermented with selected yeast strains to enhance the unique aromatics & flavours. Each individual parcel was then racked, before being blended together to create this generous full-textured style. The wine was then filtered, and bottled to retain & capture the remarkable freshness of Marlborough Sauvignon Blanc. TASTING NOTE Perfumed with nettle ripe tropical fruits which are also evident on the palate along with limey flavours and a rich minerality - classic Marlborough Sauvignon. The wine is sappy fresh, clean and delicious. VEGAN WINE**

    SPUMANTE BRUT – Palladiano Durello

    PRODUCTION The Durello grape is local to the Veneto region - grown on the volcanic hillsides of Monti Lessini, between Verona and Vicenza. The name of the grape refers to the small, late-maturing berries (duro = hard). Durello's naturally high acidity and cool, hillside vineyards produce complex, long lived wines to rival Italy's finest sparklers. Production of Durello Spumante is mostly in the hands of a few small growers, traditionally producing bottle fermented wine with up to 6 years on lees. However the variety is also well-suited to the production of fresh, zesty, tank-method wines such as this - aged for 2-3 months on lees. TASTING NOTE Citrus and gently floral aromas lead to a very fresh and zippy palate with crisp green apple and lightly honeyed characters. A refreshing and approachable style of fizz - yet with texture and depth underlying the bright fruit. VEGAN WINE **

    VIOGNIER “Domaine de Vedilhan”

    PRODUCTION Domaine de Vedilhan (pronounced 'Domaine de Ved-ee-ohn') is the estate of the Fayet family, based in the village of Moussan close to Narbonne. Uniquely, a brook runs around the estate which provides much-needed water in this very hot climate, giving the wines their freshness and appeal. Vines are managed using the 'lutte raisonnée' method and terroir is a combination of limestone, sand and sea shale, meaning the vines dig deep for their nutrients and thus produce excellent quality grapes. 50% of the production from this Domaine is used for Boutinot wines. Since 1999, our winemakers have been working closely with the Fayet’s on all aspects of the production, from when to harvest to the exact blend or style of wines. The Viognier was picked early and carefully selected and handled in the winery to maintain its acidity and fresh aromatics, and was vinified without oak. TASTING NOTE Honeysuckle on the nose; richly textured and nicely balanced with flavours of apricots and a satisfying delicate bitterness on the finish. VEGAN WINE **
