    BAROLO (Nebbiolo) “Araldica Flori” (Italy)

    Production Made from Nebbiolo grapes cultivated around the town of Barolo in southern Piemonte. These are trained on a low Guyot trellis at a density 4-5,000 vines/ha. The grapes were hand-harvested, de-stemmed and then crushed to small fermenters, for around 12 days, with daily pumping-over. This ensures good colour and flavour extraction, but avoids over extraction of the abundant Nebbiolo tannins. The wine was drained off at dryness, and the skins transferred to a small press. After pressing the wine was settled for two days, and then racked to stainless steel tanks for malolactic fermentation. After three years maturation in 50hl Slavonian oak casks it was racked and bottled. Tasting notes A complex nose combining plum, mulberry, ripe strawberry and brown spice with delicate floral and violet notes. Tannins are firm and pleasingly supported with plump fruit and a rounded texture, giving a good lengthy finish. Food match Perfect with wild boar sausages, venison, roast lamb or gamey stews. ** VEGAN WINE **

    CAB SAV SYRAH CINSAULT “Domaine de Tourelles” (Lebanon)

    Production 100% manually harvested blend of Cabernet Sauvignon (40%), Syrah (40%), Grapes are grown on 15-20 year old vines on sandy limestone, with clay sub-soils. Cinsault (15%) and Carignan (5%). Traditional vinification in concrete vats, after 10 days fermentation the wine is blended and then aged in concrete vats for 16 months. Tasting notes A traditional blend. Deep ruby red with fantastically expressive aromas of cherries, cedar wood, rosemary and cloves. A rich savoury palate with lots of Morello cherry and blackberry flavours, some earthy spice and fine tannins. A wine packed with flavour and heritage.     CHAMPAGNE – Champagne Charles Chevalier Brut d’Honneur

    PRODUCTION The vines are mainly planted in shallow soil which encourages the roots to grow deeply into the underlying chalk, providing them with water and warmth. The Pinot Noir vineyard in Aÿ has a sunny, south-facing slope, which allows the grapes to reach excellent maturity. Sustainable and environmentally friendly agriculture is practiced wherever possible. The harvest is always done by hand. Grapes are whole bunch pressed and the juice is racked to a tank where it is allowed to settle for at least 12 hours. The clear juice is racked and yeast added to encourage a thorough fermentation at a cool temperature, approximatly 15-17°C. After a short period of post ferment maturation, the wine is bottled with a yeast addition to allow for secondary, in bottle, fermentation. The dosage is 9 g/l. TASTING NOTE A fine Champagne, made in the classic tradition of the houses of Aÿ. Principally Pinot Noir and Chardonnay with a little Pinot Meunier, matured in cool chalk cellars before release. ** VEGAN WINE **

    CORVINA CORVINONE RONDINELLA “Urban Park Apassimento” (Italy)

    Production Produced from Corvina, Corvinone and Rondinella grapes harvested from hillside vineyards north of Verona. 'Appassimento' refers to the process by which the grapes are dried for a few months before being pressed and vinified - this technique is more common in the Veneto than elsewhere in Italy. In this instance the grapes are dried for 30 days before vinification, and the wine spends 6 months in oak. The resulting red is rich with some residual sweetness. Tasting notes Bright berry and black cherry aromas, and a touch of spice. The palate has all of Valpolicella's appealing fresh cherry and ripe bramble fruit, along with added weight and complexity from maturation in oak. Supple tannins lead to a finish of delicate sweetness, offset by fresh acidity. Food match Great with barbecues, slow-cooked and caramelised meat dishes, or strong-flavoured cheeses.

    FERNAO PIRES “Strange Bru” (SA)

    PRODUCTION Of the last blocks of Fernao left in the Cape this is the oldest at 30-something years old. Originally grown for yield and brandy this Portuguese immigrant certainly found its feet but fell out of favour. Which is where we all come in.. Before we lose ‘em let’s use ‘em. Naturally abundant in gently aromatic, fleshy fruit 2018 in particular focused the fruit in this Breede River Valley vineyard. All the rock-stars are sniffing around this block now which is good for its future but here is an accessibly priced expression of the loveliness of the Found before it gets Lost. In Portugal the variety is also known as Maria Gomes, which is strangely sexy in itself. Best drunk in its youth this wine is not for later, it’s definitely Fernao. TASTING NOTE A mineral nose of crushed granite, peach kernel and petrichor. On the palate the sandy seam underpins ripe, juicy stonefruit flesh. The wine finishes tight and bright with a grapey, lightly floral finish.

    FLEURIE (Gamay) “La Reine de l’Arenite” (France)

    PRODUCTION 'Arenite' is the terroir of pinky, crumbly sandstone of the La Madone vineyards, rated as one of the best vineyards in Fleurie. At up to 450m altitude and with soils still untouched by phylloxera, goblet trained vines on the east and south east facing vineyards lie below the Chapel of the Madonna at the top of the hill. Gamay Noir vines range from 40 to 90 years of age. Grapes are hand-picked and wholeberry fermented for 8-10 days (traditional maceration carbonique) followed by a further 2 or 3 days on the skins to assist with aromas. No use of cultured yeasts. Pressed after an 8-10 day cuvaison. First press wine was returned to vat and left for 8 months before bottling. TASTING NOTE Very pretty indeed, a heady perfume of freshly picked irises and peonies drifts above the crushed berry fruit nose. Ripe tannins and fresh acidity support a palate of Morello cherries, strawberries with wonderful savoury finish. ** VEGAN WINE**
